Karen's Spicy Chicken Mince
A real winter warmer and a tasty alternative to minced beef. Why not serve it up with a hot & crispy jacket potato as seen here or with a healthy salad. It’s also delicious with rice, pasta, new potatoes, vegetables or simply on its own!

Cook time: 30 minutes
Ingredients
- 3 tablespoons extra virgin olive oil
- One onion chopped
- 500g minced chicken or turkey
- Pack chestnut mushrooms quartered
- 4 tablespoons Karen’s Spicy Marinade
- Tin chopped tomatoes
- 100ml single cream
- McDougalls Thickening Granules
Method
Heat the oil on a medium heat & add the onion, cook for 5 minutes. Add the minced chicken & when almost cooked, add the marinade & cook for a further 5 minutes on a low heat. Add mushrooms, chopped tomatoes, cream & heat through.
Simmer on a low heat for 20 minutes & if desired, add thickening granules to your required consistency (start with just a little). Delicious!
NOTES
You could substitute the single cream with a low fat alternative such as quark or creme frachie
