Karen's Chicken Rice 'n' Peas
When you’re hungry, this healthy chicken dish is very satisfying & packed with nutrients too. The dark soy sauce really complements the marinade & works very well with this rice dish. I love the sweetness of the frozen peas too – so deliciously moreish!
Serves: 4
Cook time: 20 minutes
Ingredients
- Fry light
- 1 onion chopped small
- 2 sticks celery sliced
- 3 chicken fillets cut into small cubes
- Handful frozen peas
- 4 tablespoons marinade
- 2 packs cooked wholegrain rice
- 6 tablespoons dark soy sauce
- Coriander (optional)
- 1 red chilli sliced thinly (optional)
Method
Fry the onion & celery in a little fry light in a wok or large frying pan until translucent then add the chicken. Stir fry for 10 minutes then add the rest of the ingredients except the coriander & chilli if using. Cook through for a couple more minutes then cut through the thickest part of one of the chicken cubes to check if thoroughly cooked. If you think it’s a little dry add more soy sauce.
Top with fresh coriander & sliced red chilli if desired.
NOTES
I love this topped with crispy noodles too!
