Karen's Stuffed Peppers with Garlic & Herb Boursin Cheese

These stuffed peppers are easy to make & they’re loaded with fresh flavours & contain just the right amount of heat. It’s a straightforward, healthy dish that’ll definitely spice up your week. I love the colours … a lovely supper dish & a really nice starter to share with your friends at a dinner party

Method

Heat the oven to 220 degrees then halve the peppers, remove the seeds then place in the oven for 15 to 20 minutes. Meanwhile, heat a non stick frying pan on medium & add the oil & onion, cook for a few minutes then add the rest of the ingredients except the grated cheese, mix well then take off the heat.

When the peppers are slightly charred, leaving the oven on, remove the peppers from the oven & rest for a few minutes to release the steam (tip out any moisture from the peppers using tongs as they will be very hot).

Spoon the mixture into each pepper then return to the oven for a further 15 minutes, turn the grill on high & sprinkle each one with a little grated cheese & place under the grill for 5 minutes until the cheese has melted

 

NOTES

Serve with a dollop of fresh, cold sour cream & chives
