Karen's Wholesome Lock-down Stew
I created this recipe during the first Coronavirus lockdown. Although it was during the summer months, I wanted to make something hearty and comforting. It’s a slow cooker dish that’s very easy to make. A wholesome meal that will really warm the cockles of your heart
Serves: 4
Cook time: 6 hours
Ingredients
- 500g minced beef
- Small pack of mushrooms halved
- Tin of chopped tomatoes
- 3 tablespoons of marinade
- 3 heaped tablepoons tomato purée
- 2 carrots thinly sliced
- 2 large potatoes cut into very small chunks
- Handful of frozen garden peas
- Beef stock cube
Method
Place everything into your slow cooker on the high setting for 6 hours, stirring occasionally & that’s it!
Don’t worry what it looks like at the start, it will be perfect at the end of the cooking time.
Delicious with crusty bread & butter!
NOTE
Please make sure your carrots & potatoes are cut very, very small so they will be cooked through at the end of the cooking time
