Karen's Party Chicken Vol au Vents

These are delicious little mouthfuls of loveliness … I make them for many of my outside catering events if canapés are required & you can be sure that guests always return for another!

Makes 20 mini vol au vents

Cooking Time: 20 minutes

Ingredients

Method

Heat a little olive oil in a pan & add the onion, cook for a couple of minutes then add the chicken fillet & cook for a further 4 minutes. Add the cream, marinade, tomato purée & wine, mix well … then add the mushrooms.

Cook for a few minutes until thickened then season to taste … garnish with a little coriander if desired.

 

NOTES

The vol au vents shown here are the party sized ones which are a little fiddly & I would suggest making double the amount you need as you can damage quite a lot in the process of making them or, you could use the usual sized ones which are a lot easier & double the ingredients
