Karen's Spicy Chicken Burger with Spicy Dip

This is so tasty & perfect if you’re not a fan of beef burgers. Pure chicken fillet with a light coating of the marinade & served in a soft, brioche bun & of course, this is baked in the oven so a healthier version too!

Method

Pre heat your oven to 220 degrees.

Place a length of cling film onto your work surface & using a round biscuit cutter or similar which is slightly smaller than the bun, cut four round fillets placing the thickest part of the chicken to one edge of the cutter. If the fillet is too small, fold the clingfilm back over the fillets & using a rolling pin, make to size.

Place fillets in a roasting tin & coat each one with one teaspoon of marinade then cook uncovered for 25 minutes (check thickest part to ensure fully cooked), slice the tomatoes then heat the remaining marinade in the microwave (in an egg cup or similar) for 30 seconds now mix with the mayo to make my amazing Tandoori Dip!

NOTES

When ready for assembling, place lettuce leaf at the bottom, then the fillet, sliced tomato & the spicy mayo … all done!
