Karen's Sweet Potato Wedges
Chunky wedges perfect as an accompaniment or on their own with your favourite dip. Serve, stand back & wait for the empty plates!
Serves: 4
Cooking Time: 25 minutes
Ingredients
- 3 sweet potatoes
- 1 tablespoon of olive oil
- 2 level tablespoons of marinade
- Little chopped parsley (optional)
- Sea salt (optional)
Method
Pre-heat your oven to 200 degrees & cut the potatoes into wedges. Place into a mixing bowl & coat with the olive oil mixing well then add the marinade & repeat. Line a baking tray with foil, brush with a little oil then tip the wedges onto the tray in an even layer & at this stage, you can garnish with a little chopped parsley if desired. Cook for 25 minutes or until lightly charred & season with sea salt
For the dip, simply heat two teaspoons of marinade in a very small container (egg cup or similar) in the microwave for 30 seconds & when cool, mix with six teaspoons of your usual mayo, creme fraiche or quark!
