Karen's Turkey & Green Bean Curry
This is based on my Chicken & Green Bean Curry recipe & works really well with leftover cooked meat or vegetables. Quite fiery this one so you could start with maybe 2 tablespoons of marinade then taste for personal preference
Serves: 4
Cooking Time: 35 minutes
Ingredients
- 5 tablespoons of olive oil
- 2 medium onions finely chopped
- 1 heaped tablespoon of tomato puree
- 500g cooked turkey
- 4 level tablespoons of marinade
- Pack of trimmed beans cut into 3
- Tin of chopped tomatoes
- 100ml single cream (optional)
- Cornflour & water (optional)
Method
Heat the oil in pan or wok on medium & add the onion. Cook for 5 minutes, now add the tomato puree & marinade then mix through. Add the tinned tomatoes & green beans. Bring to the boil then stir well now add the turkey or your chosen cooked meat or vegetables & simmer on low for 25 minutes … delicious!
At the end of the cooking time add the single cream if desired
NOTES
Serve with plain boiled rice & chapatis
If you would like a thicker consistency mix a heaped teaspoon of cornflour with a little water & add to the curry (a little at a time)
