Karen's Gnocchi with Spinach

There are so many ways that you can use the marinade with gnocchi & if you regularly cook with it you will know what I mean! This recipe is very easy to make but whatever dish you make using this fabulous ingredient, just try a teaspoon or so of the marinade to your usual meal … perfect!

Pre-heat your oven to 220 degrees & in a small roasting dish, add enough olive oil to cover the bottom then add the whole garlic cloves & cherry tomatoes, place into the oven

Bring a large saucepan of water to the boil then add the gnocchi, bring back to the boil & simmer gently for two minutes, drain well.

Add the gnocchi to the hot fat along with the marinade, baste well then cook for 5 minutes, add the chopped spinach, mix well & place back into the oven until golden brown. Remove with a slotted spoon then place in a warmed serving dish & add a little sea salt & the cream if desired.

NOTES

You can experiment loads with this dish … add spring onions or chillies as a garnish & amazing with the cream which you could substitute with creme fraiche if preferred
