Karen's Spicy Chicken Skewers
Everybody loves these delicious, colourful chicken skewers in the summertime, perfect for your barbecue & you can use any of your favourite ingredients! If the weather isn’t being too kind you can of course oven bake or grill
Makes 5 skewers
Cooking Time: 10 minutes
Ingredients
- 3 skinless chicken fillets cut into large cubes
- 3 tablespoons marinade
- 1 yellow pepper
- 1 green pepper
- 1 red pepper
- 1 red onion
- Pack of chestnut mushrooms halved
- Fresh lemon wedges (optional)
Method
Cut the chicken fillets into large cubes & place into a bowl, add the marinade & mix well making sure all have an even coating of the marinade, mix in some chopped coriander or parsley if desired
Cut all the other ingredients into squares as shown & thread onto your skewer
Cook for 8 to 12 minutes, turning frequently until the chicken is thoroughly cooked
NOTE
A squeeze of fresh lemon is delicious on these, simply squeeze over whilst cooking or add just before serving.
You can of course omit the vegetables & use the marinated chicken on its own! I love them this way with fresh pineapple chunks … now that’s a perfect combination! Also vegan adaptable … simply replace the meat with any of your favourite vegetables which have been coated with the marinade … delicious!
