Toasted Sourdough with Zingy Avocado Smash, Piccolo Tomatoes & Mozzarella

This is a lovely healthy lunch or supper idea which packs a punch although quite light! I love the different taste sensations of each ingredient & it really is very quick to make!

Ingredients

Method

Toast your bread until golden, meanwhile coat the tomatoes in the oil & add to a griddle or frying pan on high heat for a few minutes, turning frequently until charred

Heat the marinade in a very small container (egg cup or similar) in a microwave on full power for 30 seconds (don’t worry how this looks when cooked), meanwhile mash the avocado with a fork & add the lime juice, mix then when the marinade has cooled down add to the smash then taste & season if desired

Arrange your smash onto the toasted bread & top with the charred tomatoes & mozzarella

NOTES

I love to buy the whole sourdough cobs then request it to be sliced thickly but you can of course do this yourself

Substitute any of the ingredients for your diet or add your favourite ingredients too! Lovely topped with a few chilli flakes & fried mushrooms!
