Karen's Beef & Tomato Curry

My family love this warming curry which is jam-packed full of amazing flavours. It has a lovely gentle kick to it, not too spicy. Why not ditch the takeaway menu and try out this healthy curry instead!

Cook time: 1 hour

Ingredients

Method

Heat the oil on a medium heat in a wok or large frying pan & add the onion & cook for 2 minutes.

Now add the beef & brown all surfaces then add the marinade & puree, mixing well. Add the tinned tomatoes, mushrooms, then turn down the heat to the lowest setting & leave to cook uncovered for 1 hour, stirring occasionally.

After this time taste & add seasoning if required, add the cream & garnish with fresh coriander.

Delicious served with basmati rice & naan.

NOTES

There is just 25ml of single cream per serving in this recipe but you can replace the cream with creme fraiche or quark to make this slightly healthier
