Karen's Creamy Turkey Curry

I have three recipes for leftover turkey as we always have so much left over at Christmas! You can use any cooked meat for this recipe & of course you can use vegetables too! Serve with plain boiled rice & naan to mop up those amazing juices

Serves: 4

Cooking Time: 30 minutes

Ingredients

Method

Place the butter into a pan along with the onion & cook on medium heat for 5 minutes taking care not to burn the butter then add the stock, cream & marinade heating through. Now add the whole button mushrooms & cook for 5 minutes then add the cooked turkey. Once piping hot take off the heat & fold in the spinach then, add two tablespoons of thickening granules, mix well & stand for one minute, if you would like a thicker sauce, simply add more granules (a little at a time), taste & if you would like it spicier, add a little more marinade!

This is delicious & although I’ve used single cream you can divide this by 4! 

NOTES

Substitute the cream for creme fraiche or quark if preferred
